COCKTAIL BAR SUPERVISOR / MANAGER
THE PACKAGE AT A GLANCE
- Base Pay: £35,000 per year
- Bonus: Share of service charge and tips under the restaurant’s tronc policy

THE ROLE
Take ownership of the bar operation in one of our Cardiff restaurants. This is a hands-on management role: you will lead the team and work behind the bar during busy services while maintaining drink quality, speed, stock accuracy and commercial performance.
You will work closely with the Restaurant General Manager and kitchen team, using effective preparation, ordering, stock and rota controls to keep the operation consistent and profitable.
A structured induction covers our restaurants, menus, drink standards, suppliers, systems, licensing procedures and management reporting.
KEY RESPONSIBILITIES
- Lead bar preparation, service, close-down and shift handovers.
- Maintain consistent standards across cocktails, wine, spirits, beer, coffee and presentation.
- Develop properly costed seasonal cocktails and drinks promotions with clear sales and margin targets.
- Manage beverage gross profit, ordering, deliveries, invoice checks, stock counts, transfers, breakages and waste.
- Investigate unexplained stock loss and take corrective action.
- Forecast demand and build rotas that match staffing levels to expected trade.
- Recruit, induct, train and coach the bar team, addressing performance issues when required.
- Deliver bar service for restaurant events, private bookings and promotions.
- Manage supplier relationships and resolve guest complaints calmly and promptly.
- Maintain licensing, Challenge 25, allergen, food-safety and health-and-safety compliance.
- Keep the bar clean, secure and well maintained, with accurate cashless payment controls.
ESSENTIAL REQUIREMENTS
- Experience leading a busy cocktail or premium hospitality bar.
- Strong cocktail skills and practical knowledge of spirits, wine, beer and coffee service.
- Direct experience managing beverage gross profit, stock, waste and labour.
- A record of training staff and improving service standards.
- Strong commercial judgement and attention to detail.
- Clear communication and sound decision-making under pressure.
- Flexibility for evenings, weekends, late finishes and peak trading periods.
- A personal licence or APLH is useful but not essential.
