We’re looking for a well-organised, curious and experienced Pastry Lead to join us at Freschen — a new café, brunch spot, and wine bar opening in Edinburgh in September 2026. Freschen brings together Austrian alpine influence and a Scottish setting, with a focus on seasonal food, house-made baking, and a thoughtful approach that feels familiar, but slightly different.
Pastry is a big part of what we do — from cakes to baked goods — all made in-house with care and attention to detail. Alongside daily café service, Freschen will also host private events and dinners, with pastry supporting both regular service and occasional event-based menus.
This role involves running the pastry section day to day, including prep, baking, and service. You’ll be joining from the beginning, helping to shape how the section works, keeping things organised, and building a steady, consistent way of working alongside the wider kitchen team.
What you’ll do
- Running and taking ownership of the pastry section
- Preparing cakes and baked goods for daily service
- Supporting with menu development, custom orders, and recipe refinement
- Maintaining a clean, organised, and well-managed section
- Working closely with the kitchen team during prep and service
- Supporting pastry preparation for private events and special dinners
- Managing stock, deliveries, and ordering within the section
- Ensuring that all food safety and health & safety standards are upheld
What we’re looking for
- Previous experience in a bakery or pastry environment, ideally including laminated doughs or viennoiserie
- Good organisation and time management
- Ability to work independently and as part of a team
- Consistent, detail-focused approach to work
- Comfortable working in a busy service environment

This is a full-time role, expected to be around 40 hours per week, with some flexibility required around opening, events, and busy periods.
Salary: £34,000–£38,000 per year, depending on experience. Higher salary may be considered.
