Job Overview
We are seeking a skilled and dedicated Butcher/manager to join our team. The ideal candidate will have a passion for food preparation and a strong understanding of food safety practices. As a Butcher, you will play a crucial role in ensuring the quality and presentation of meat products while maintaining high standards of hygiene and cleanliness in the kitchen environment.

Duties

Prepare various cuts of meat, including beef, pork, lamb, and poultry, according to specifications.
Ensure all meat products are processed in compwith food safety regulations and standards.
Maintain cleanliness and organisation of th safely and effectively.
Collaborate with kitchen staff to fulfil orders and ensure timely food production.
Assist in inventory management by tracking stock levels and reporting shortages.
Provide excellent customer service by answering queries regarding meat products and preparation methods.

Qualifications

Proven experience as a Butcher or in a similar role within a restaurant or kitchen environment.
Strong knowledge of food preparation techniques and food safety practices.
Familiarity with various cuts of meat and their culinary uses.
Excellent knife skills and attention to detail.
Ability to work efficiently in a fast-paced environment while maintaining high standards of quality.
Good communication skills and the ability to work as part of a team.
A culinary qualification or relevant training is an advantage but not essential.

The ideal candidate will have a proven track record of increasing sales, improving profitability, and delivering exceptional customer service while maintaining the highest standards of product quality, food safety, and team performance.

Key Responsibilities

Manage the day-to-day operations of the butchery department.
Prepare and oversee the preparation of beef, lamb, pork, poultry, and value-added products to the highest standards.
Drive sales growth and improve gross profit through effective merchandising, promotions, and stock management.
Lead, train, and motivate the butchery team to achieve business objectives.
Maintain excellent standards of food safety, hygiene, and compliance.
Manage stock levels, ordering, wastage, and margin control.
Deliver outstanding customer service and product knowledge.
Ensure the department is presented to the highest standards at all times.

Essential Requirements

Proven experience as a Butcher Manager or Senior Butcher.
Demonstrable history of increasing trade, sales, and profits.
Strong leadership and team management skills.
Excellent knowledge of meat preparation, cutting techniques, and product presentation.
Thorough understanding of food safety and HACCP procedures.
Ability to work in a fast-paced retail environment.
Strong commercial awareness and stock control experience.
