Full job description

We are now accepting applications for the following position:

EXECUTIVE CHEF

RESPONSIBILITIES INCLUDE:

Drive brand consistency between the portfolio of establishments.

• Role responsible for all financial aspects of the culinary operations of all venues including P&L management. • Reviews and adjust systems and procedures in the kitchen to ensure their effectiveness.

Develops, designs, or creates new menus and recipes based on standards or artistic contributions.

Demonstrates knowledge of high-quality food products, presentations, and flavor.

Ensures compliance with food handling and sanitation standards at all venues.

Ensures compliance with all applicable laws and regulations.

Operates and maintains all department equipment and reports malfunctions.

Supports procedures for food & beverage portion and waste controls.

Develop and implement environmentally friendly processes and procedures for food preparation, energy use and waste management in the restaurant.

Management and development of the Food & Beverage staff in the areas of quality assurance, professionalism, consistency, and product knowledge.

Assurance of cost protocols as established by fiscal budget & senior management.

Assurance of compliance with Cayman Islands Dept. of Health regulations (includes assurance that all appropriate certifications are achieved)

Establishment of relationships with suppliers and vendors and assurance of quality service and representation by same

Involvement/participation in charity events, cooking demonstrations and any other events deemed beneficial to the restaurant (if needed)

QUALIFICATIONS:

Minimum 7 years’ experience in a high-volume hotel and restaurant environment

2-year degree from an accredited university in Culinary Arts, Hotel and Restaurant Management, or related major; 2 years’ experience in the culinary, food and beverage, or related professional area

Ability to handle multiple tasks and work well in environment with time constraints.

Ability to troubleshoot effectively.

Detail-oriented with good organizational skills, performing work accurately and efficiently.

Demonstrated excellent communication skills, both oral and written Strong computer skills, especially Microsoft Office (Word, Excel, PowerPoint)

Ability to lift 50lbs; sit, stand, walk for an extended period of time.

Must be comfortable working a flexible schedule and have the ability to work outside of normal business hours (i.e. evenings, weekends and public holidays, as needed)

Salary: US$85,000-US$100,000 per annum (Paid Monthly)

Benefits: In accordance with Cayman Islands law

Location: Ms. Pipers Kitchen + Garden, Grand Cayman
