Job Title: Sous Chef (Pre-Opening) Location: Abergwaun Bistro, Fishguard (Hotel)Start Date: July 2026 Hours: 4 days/week (Thu–Sun evenings + Sun brunch) | Guaranteed no late finishes

Abergwaun Bistro is a soon-to-open fine dining restaurant in the center of Fishguard. We are creating an intimate experience for 30 seats with a curated set menu. Our ethos is strict but simple: we source every main ingredient within a 30-mile radius, prioritising organic produce from local producers.

We believe creativity and high-quality work thrive under low pressure and are committed to a healthy work-life balance.

We are looking for a Sous Chef to support the Head Chef in running our small team before our July opening.

Your responsabilities will include:

Assisting the Head Chef with mise en place and service on most days, and running the kitchen while managing the team when the Head Chef is absent.
Maintaining a clean, tidy, and relaxed workspace where creativity can flourish.

The profile we are looking for:

Familiar with fine dining setups and comfortable working with set menus.
Capable of working in a clean, calm, and organised manner.
Eager to express your creativity and learn new techniques in a supportive environment.

Note: A driving license is highly recommended as Fishguard is somewhat remote.
