Job Summary
We are seeking a skilled and passionate Sushi Chef to join our vibrant culinary team. The ideal candidate will possess a strong understanding of traditional Japanese sushi preparation, demonstrate creativity in presentation, and maintain the highest standards of hygiene and food safety. This role offers an exciting opportunity to craft authentic sushi dishes in a dynamic environment, contributing to a memorable dining experience for our guests.

Duties

Prepare and assemble a variety of sushi, sashimi, and other Japanese dishes with precision and artistry
Maintain consistency in taste, presentation, and quality across all dishes served
Ensure all ingredients are fresh, properly stored, and used in accordance with food safety standards
Manage the mise en place for sushi stations, including slicing fish, preparing rice, and organising ingredients
Adhere to health and safety regulations, including strict hygiene practices and proper handling of raw fish
Collaborate with kitchen staff to ensure smooth service during busy periods
Keep work areas clean and organised at all times, including sanitising utensils and surfaces regularly
Stay updated on current culinary trends related to Japanese cuisine and incorporate innovative techniques where appropriate

Skills

Proven experience as a Sushi Chef or similar role within a professional kitchen environment preffered but full training can be given
Excellent knife skills with the ability to prepare fish and vegetables efficiently and safely
Strong knowledge of Japanese cuisine, especially sushi preparation techniques
Ability to work under pressure whilst maintaining attention to detail and quality standards
Good organisational skills to manage multiple tasks simultaneously in a fast-paced setting
Excellent communication skills and the ability to work effectively as part of a team
Knowledge of food safety regulations and hygiene standards specific to raw seafood handling
Creative flair for presentation and an eye for visual appeal in dish plating
