Full job description

Help make Woodruffs the destination for quality brunch and lunch in Stroud!

We are looking for a full-time head chef to make café-friendly food to a high standard and with consideration of healthy and vegan choices. If you’ve seen our menu and think you can liven it up, this might be the job for you!

Days are Thursdays–Mondays or Fridays–Tuesdays, around 7.30am–4 (9–3 Sundays). We can negotiate exact hours.

We don’t have a Merrychef or pre-packaged microwave food – our cooking methods are more like a home kitchen.

KEY ATTRIBUTES

Efficiency – Saturdays are busy and speed is important to keep customers happy and to turn tables quickly. A second person, who you will manage, is available on Saturdays and potentially Sundays.

Continuous improvement – using your own analysis, customer feedback, and trends, always thinking how to improve a dish whether that’s on flavour, presentation, portion size, or costing.

Plant-based cooking – showing what can be done with vegetables, pulses and spices, rather than considering them a second-class option to meat.

Interest in ethics, seasonality and nutrition – how we can make food with a nod to these qualities whilst keeping within our price range.

OTHER ATTRIBUTES

The sort of things that would be relevant to any chef job.

WORKING WITH OTHERS. You are responsible for ensuring other chefs are working to the standard expected, maintaining authority without bullying. You respect the KP and front of house roles, working with them to solve any issues rather than creating an “us and them” culture.

FEEDBACK. You accept feedback on your food as positive information to help improve, rather than dismissing it.

SPEED AND ORGANISATION. You prepare what you can in advance and can cope with several orders coming through at once – customers typically don’t like waiting longer than 15 minutes.

TIME MANAGEMENT. You are productive in quiet moments, e.g. helping the KP, sorting out a fridge, researching a new recipe.

RELIABLE. It goes without saying that we must have a chef who turns up on time and isn’t frequently ill.

COSTS. You are sharp on food costs, ensuring every dish is accurately costed and updated when supplier costs change. You check portion sizes match the costing and consider the cost/labour differences of bought-in vs. homemade items.

CONSISTENCY. The same dish will look and taste the same regardless of whether the customer orders it today, tomorrow or next week. You will ensure other chefs can match the consistency.

STOCK MANAGEMENT. Order from various suppliers, keeping an eye on their prices and striking the balance between under stocking and over stocking. Emergency purchases is the exception rather than the rule.

WASTE AND ENVIRONMENT. You will minimise wastage of food through stock control, clever menu design, and ad-hoc specials. You care about recycling.

FOOD HYGIENE. Cleanliness and food safety to have a 5-star rating.

WILLINGNESS TO ADAPT: Costs change, customer tastes change. You are proactive at suggesting changes that you believe will help the business.

NEW MENU DEVELOPMENT. Come up with ideas, cost, test, then we’ll take photos and promote. Daily specials are unnecessary (hard to cost and advertise). The same menu for months on end can reduce excitement from regulars. We will need to find a balance.

SALES: You are interested in our sales and how we can increase them.

Cakes are currently made by someone else but you will be responsible for slicing them and making sure the oldest cakes go out first.

Pay: £15.00-£17.50 per hour
