Full job description

DELIFONSECA DOCKSIDE at Brunswick Quay in L3 has been operating for over 16 years, consisting of a large, spacious restaurant, food hall and rare-breed butchery concession by Edge & Son.

The restaurant & kitchen is a modern and very spacious working environment, with 180 inside covers and 45+ outside.

The position of line chef is ideal for someone that has experience working under pressure on busy services and has good experience running different sections in both fine & casual dining. Breakfast service will also be part of this role, particularly at weekends.

The successful candidate needs to be organised with good attention to detail, and speed on service without compromising the quality or presentation of the food. It should also be understood that as well as serving the restaurant, the team also produces food to be sold in the food hall and the outside catering department. Whilst much of this is not likely be part of your role on a daily basis you will be expected to ensure that team work is paramount and communication clear so that such output is accomplished well, quality maintained and team spirit and fairness of workload is maintained.

Delifonseca has won many awards over the years and the successful candidate needs to understand and share the Delifonseca ethos - a celebration of both great produce and professional cooking skills, which our ‘USP’ of changing menu and blackboard specials allow us to showcase. Our food has garnered regular local and national attention over the last 16 years, and we want to continue to build and better that reputation and add more trophies to the cabinet!

This is a busy and ambitious place and the ideal candidate needs to be the enthusiastic, hardworking and ambitious too. The head chef is looking for a team member that is keen to learn and take on responsibility and is happy to give training in costing, technique etc.

Role Responsibility

Work alongside the head and sous chef to run a high quality, high-volume, fresh food kitchen.
Be able to run any of the sections and the pass when required once trained to ensure that all food output is up to our high brand standard
Ensure excellent Food Hygiene and Health & Safety standards at all times and ensure a good working relationship with the KPs
Work well with the front of house team to ensure good communication and team spirit

The Ideal Candidate

At least 12 months experience working as a line chef within a fresh food, high-volume environment (bistro, gastro-pub, etc.)
Ideally have some experience in Rosette or Bib Gourmand kitchens
Be passionate about high-quality food and committed to great standards
Be fascinated in the craft of cooking and creation, with a genuine interest in quality food ingredients & food trends

Bonus for working for the company. A reasonable working week with a balanced rota. However, you will likely be working most weekends as these are predictably our busiest times. That said, we are currently only open until 6pm on Friday/Saturday, unless we have special events on. We may open later in the evening again soon, but we are not a city centre restaurant and our ‘lates’ are not that late. You will rarely work past 9:30/10pm. Other bonus’ are a staff discount in our food hall and restaurant, as well as from Edge Butchers and the pleasure of working with a hands on owner, head chef and general manager who care about the details and not just the bottom line!

Salary dependent on experience. Fair and equitable share of tips.
