About the Kitchen

MUSICA runs an American-Italian menu — think elevated bar classics, wood-fired energy, and crowd-pleasing flavours — served alongside live music and entertainment seven days a week. You'll work alongside a kitchen team of 4-5 chefs, with weekends being the heartbeat of the operation: high-energy, high-volume service in a venue that's as much about atmosphere as it is about food.

We sit in one of Bracknell's busiest dining destinations, surrounded by strong competition — so standing still isn't an option. As Sous Chef, you'll be right at the centre of that, running a tight pass and helping bring new dishes to life alongside the Head Chef.

We're a newly opened venue and our weekends are already thriving — the next chapter is building weekday trade, and you'll play a direct part in that. This is a genuine opportunity to grow with a business that's still finding its shape, not join a kitchen where everything's already fixed.

Purpose of the Role

The Sous Chef supports the Head Chef in running all aspects of the kitchen — leading service in their absence, maintaining food quality and consistency, and helping develop the team and the menu. This is a hands-on role at the pass, not a desk job.

Key Responsibilities

● Support the Head Chef in day-to-day kitchen management, taking full charge of service in their absence.

● Help develop and test new dishes as part of the venue's ongoing menu evolution.

● Lead and coach junior chefs and kitchen porters during shifts, maintaining a positive, high-standard kitchen culture.

● Maintain strict hygiene, health, and safety standards (HACCP compliance) at all times.

● Support inventory control, stock rotation, and waste minimisation to protect margins.

● Ensure consistent food preparation, presentation, and portion control across all sections.

● Assist with ordering and supplier communication when the Head Chef is unavailable.

● Report directly to the Head Chef, feeding back on kitchen performance, team issues, and service challenges.

Key Skills & Experience

● Proven experience as a Sous Chef or strong Chef de Partie ready to step up.

● Comfortable running a section and covering the pass during busy, high-volume service.

● Genuine interest in menu development, ideally with exposure to American-Italian or similar cuisine.

● Strong leadership instincts — able to keep a team calm and focused under pressure.

● Solid understanding of food safety, allergens, and dietary requirements.

● Organised, reliable, and comfortable taking ownership when the Head Chef isn't on shift.
