Sous Chef / Senior Sous Chef

Location: Mill Race Moto, Colchester, Essex (CO6)

Salary: £35,000 – £40,000 per year (dependent on experience) + Tronc + Paid Overtime

Hours: Full-time (45-hour week), including weekends

Opening: August 2026

The Opportunity

We’re building something special at Mill Race Moto and are looking for an experienced Sous Chef or Senior Sous Chef to join us from day one.

This isn’t a fine dining kitchen, and it’s not a high-volume chain operation. We’re creating a daytime destination centered around great ingredients, excellent baking, quality brunch and lunch dishes, and a team that genuinely enjoys working together.

As Sous Chef / Senior Sous Chef, you will work directly alongside our Head Chef, Dan, taking on a key leadership role on the line. You’ll have the opportunity to help shape standards, contribute ideas, lead service, and become a core part of a business being built carefully and deliberately, with quality and people at its center.

The Role

Working alongside Head Chef Dan, you will be a vital pillar of our kitchen operations. Your responsibilities will include:

Service Leadership: Running a sharp, fast-paced service across our high-quality brunch, lunch, sub, and open-toast menus.
Food Preparation & Quality: Cooking and plating dishes to consistently high standards while taking pride in presentation and attention to detail.
Kitchen Operations: Managing daily prep lists, kitchen hygiene, and HACCP standards in the Head Chef’s absence.
Team & Culture: Supporting, mentoring, and guiding junior chefs and kitchen porters to create a positive, professional, and enjoyable working environment.
Stock & Standards: Assisting with receiving deliveries, managing stock levels, minimizing waste, and helping maintain kitchen GP targets.

About You

You’ll be an experienced chef looking to make a genuine impact in an independent business. Ideally, you’ll bring:

Proven Experience: Solid background as a Sous Chef or Senior Sous Chef in a busy, quality-focused kitchen, cafe, pub, or brasserie.
Service Drive: Calm and efficient under pressure, with the ability to lead the pass during busy brunch and lunch rushes.
High Standards: A passion for great ingredients, consistency, and clean, organized kitchen practices.
Strong Work Ethic & Reliability: Pride in doing things properly, even when nobody is watching.
Team Mentality: Most importantly, we’re looking for good people—someone who cares about quality, enjoys working as part of a team, and wants to help build something from the ground up.
