Location: Colchester, Essex (Located just 2 miles outside the town center – reliable transport required)

Hours: Full-time, 5 days a week (Includes weekend shifts)

About Us

We are a brand-new, independent startup launching an exciting destination café and bakery just two miles outside of Colchester. We are building a vibrant space where high-quality baking meets a unique community atmosphere. We are looking for a skilled, passionate baker who wants to be a key part of our journey and make a real impact from day one.

The Role

As our lead baker, you will be responsible for producing a high-quality range of breads, pastries, and baked goods. This is a hands-on role in a brand-new space, offering the chance to showcase your craft and maintain exceptional standards of consistency and flavor.

Key Responsibilities:

Preparation and baking of breads, sourdoughs, pastries, and daily specials.
Managing dough production from scratch, demonstrating complete control over fermentation, proofing, and baking variables.
Maintaining high standards of food hygiene, safety (HACCP), and kitchen cleanliness.
Managing ingredient stock, minimizing waste, and ordering supplies.
Contributing ideas for seasonal menu rotations and product development.

About You

You are a dedicated professional who takes immense pride in the craft of baking. You thrive in a production environment but retain a deep respect for traditional methods.

Skills and Experience Required:

The Perfect Blend of Skills: You must possess extensive experience with both machine mixing/kneading for commercial volume and traditional hand-kneading techniques.
Proven Track Record: Experience working in a professional bakery or high-volume café kitchen.
Technical Knowledge: A deep understanding of baker’s percentages, temperature control, and sourdough culture management.
Reliability: Early mornings are the backbone of this industry; punctuality and a strong work ethic are non-negotiable.
Location & Transport: Because we are located 2 miles outside of Colchester town center, public transport may be limited during early morning start times. A valid driver’s license and independent transport are highly recommended.

A competitive base salary of £35,000 per annum.
