Full job description

We are looking for an experienced and passionate Senior Sous Chef to support the Head Chef in delivering exceptional food and leading a high-performing kitchen team. This is a hands-on leadership role in a busy, premium country pub where quality, consistency, and outstanding guest experiences are at the heart of everything we do.

The successful candidate will be an inspiring leader with excellent culinary skills, a strong understanding of fresh food operations, and the ability to maintain the highest standards in food quality, hygiene, and kitchen performance.

Key Responsibilities - Kitchen Leadership

Support the Head Chef in the day-to-day management of the kitchen.
Lead, motivate, and develop the kitchen brigade, creating a positive and professional working environment.
Supervise service to ensure dishes are delivered consistently to specification.
Act as the senior kitchen leader in the Head Chef's absence.

Food Quality

Prepare and present high-quality dishes using fresh, seasonal ingredients.
Ensure consistency in flavour, presentation, and portion control.
Maintain exceptional standards of cleanliness and food safety.
Monitor quality throughout preparation and service.

Team Development

Train, coach, and mentor junior chefs and kitchen assistants.
Conduct regular skills development and support succession planning.
Promote teamwork, accountability, and high performance.

Kitchen Operations

Assist with stock ordering, stock control, and supplier management.
Minimise waste and maximise gross profit through effective kitchen management.
Support menu development, seasonal specials, and new dish creation.
Ensure equipment is maintained and reported where repairs are required.

Compliance

Ensure compliance with all Food Safety, HACCP, COSHH, allergen, and health & safety legislation.
Maintain accurate kitchen records and due diligence documentation.
Lead by example in maintaining safe working practices.

Skills & Experience

Previous experience as a Sous Chef or Senior Sous Chef within a premium pub, hotel, or restaurant.
Strong fresh food background with excellent cooking skills.
Proven ability to lead and motivate kitchen teams.
Experience managing busy services while maintaining quality standards.
Excellent organisational and communication skills.
Good commercial awareness with experience controlling labour and food costs.
Food Safety Level 2 or 3 qualification (preferred).
