Full job description

Job Overview
As Second Cook, you will be the key supporting role in our kitchen operation, assisting the Head Chef in all aspects of food preparation, production and kitchen management. You will help deliver high-quality, consistent dishes that meet our standards, follow health & safety regulations, and contribute to maintaining an organised, efficient and positive working environment. You will also be required to take charge of the kitchen and lead the team when the Head Cook is absent.

Key Responsibilities:

● Assist in preparing, cooking and presenting all menu items in line with established recipes, portion sizes and quality standards.

● Manage specific sections of the kitchen independently as assigned.

● Check and maintain the quality and freshness of all ingredients; report any shortages, spoilage or quality issues promptly.

● Support stock control tasks including receiving deliveries, proper storage, stock rotation and recording inventory levels.

● Ensure all kitchen areas, equipment and utensils are kept clean, hygienic and well‑maintained, strictly following food safety and hygiene laws and guidelines.

● Supervise and communicate effectively with other kitchen staff supporting where appropriate.

● Follow all safety procedures to prevent accidents, and report any hazards or equipment faults immediately.

● Handle service periods efficiently, keep up with order volume and ensure timely delivery of dishes.

● Perform opening and closing duties as required, including setting up stations, turning on/off equipment and securing the workspace.

Requirements: Essential:

Proven experience working as a cook or chef in a commercial kitchen environment .

Solid knowledge of different cooking techniques, ingredients and food preparation methods.

Understanding of food safety, hygiene regulations and health & safety standards.

Ability to work flexibly, including early mornings, evenings, weekends, public holidays and Christmas Day/New Years Eve.

Good team player with strong communication skills, able to follow instructions clearly and work under pressure.

Physically fit and able to stand for long periods, lift heavy items and work in a hot, fast‑paced environment.

Passionate about developing sales of food across the club.

Desirable:

Relevant culinary qualification or apprenticeship completion.

Experience leading a section or small team. Knowledge of menu planning, cost control and stock management. Valid food hygiene / safety certification.

Own form of transport-shift patterns may require starts from 8am and evenings up to 10pm.
