Job Introduction

South Lodge, a part of the Exclusive Collection, is home to a Michelin-starred restaurant, an award-winning spa, and the lakeside lodges, The Reeds, which offer a serene retreat where nature, luxury, and wellbeing meet. Together, they create an environment that embodies elegance, creativity, and meticulous attention to detail.

The Pass at South Lodge is not just a restaurant, but a gastronomic experience that has earned a Michelin star and 4 AA Rosettes.

You will join as the Sommelier, playing a key role in delivering a refined and memorable dining experience within our award-winning restaurant. Working closely with the Restaurant Manager and chefs, you will support the smooth running of service, ensuring wines are presented with confidence and care while enhancing the overall guest journey.

This role would be ideally suited to someone with previous Sommelier experience at a restaurant with a Michelin star or AA Rosette.

Key Responsibilities

Support the delivery of wine service during service, ensuring attention to detail and consistency
Work closely with the restaurant team to enhance the guest dining experience
Maintain wine stations, glassware and service areas to the highest standards
Assist with wine preparation, service flow and coordination with the kitchen pass
Build knowledge of the wine list and confidently communicate recommendations when required
Contribute to a smooth, organised and professional service environment

Person Specification

Previous experience in a restaurant or food and beverage environment
Passion for wine and a desire to develop knowledge further
Strong attention to detail and pride in presentation
Confident communicator with a positive and team-focused approach
Ability to work in a fast-paced, high-quality service environment
A proactive attitude and willingness to learn and grow
