Head Chef – Modern Gastropub & Seasonal Kitchen

Location: Sedgefield

Salary: Competitive (Tailored to Experience)

Schedule: Wednesday – Sunday (Every Monday & Tuesday OFF)

Type: Full-time, Permanent

The Opportunity

The Pickled Parson is entering an exciting new phase, and we are looking for an ambitious, hands-on Head Chef to lead our kitchen into its next chapter.

This is the perfect role for a passionate Senior Sous Chef ready to step up, or an established Head Chef looking for a fresh challenge where they have genuine creative freedom. If you love seasonal ingredients, enjoy leading from the front, and want to build a kitchen culture centered on quality and teamwork, we want to hear from you.

The Role

As Head Chef, you will have full ownership of the kitchen. You won't just be managing a pass; you will be shaping the identity of our food offer.

Menu Development: Create exciting, seasonal menus that balance modern innovation with well-loved pub classics.
Leadership: Mentor, train, and inspire a motivated brigade, fostering a positive and professional kitchen culture.
Commercial Management: Take charge of food costs, stock control, and rotas to ensure a profitable and efficient operation.
Standards: Maintain exceptional quality and presentation while upholding our 5-star food hygiene rating.
Collaboration: Work closely with the General Manager and Area Ops Manager on long-term food strategy and growth.

Requirements

Experience: You are either a highly experienced Sous Chef ready for your first Head Chef role or a current Head Chef with a proven track record.
Passion: A genuine love for cooking with fresh, seasonal produce and "real food" done properly.
Leadership: A natural ability to develop people and lead by example during a busy service.
Skills: Commercially aware, highly organized, and calm under pressure.
Communication: Comfortable collaborating with senior management to drive the business forward.
