The Zonda at The Halfway House is looking for a professional Sous Chef to take over sections in the kitchen under our Head Chef's supervision. The successful candidate will play a key role in contributing to our customer satisfaction and acquisition goals. We are very much looking after our staff and provide career progression within the company.
You will be working with locally sourced seasonal produce, maintaining hygiene standards, contributing ideas towards new menus and you must be comfortable working on all sections.

The pub is steeped in history having previously been owned by Corpus Christi College of Oxford before it was purchased by Donnington Brewery in 1975. It sits in the heart of a small community and is a perfect example of a Cotswolds pub.
The current menu focuses on fresh pizza using fresh local produce, an extensive starters/sharing dishes together with desserts, all prepared fresh in our kitchen.

YOUR RESPONSIBILITIES:
Reports to: HEAD CHEF
FOOD & SERVICE
Ensuring all mis en place is done in an orderly fashion to the standards required
To be fully conversant with all menus, in particular items which are the responsibility of your section and of their recipes and quantities
To run section efficiently and effectively at all times
Submitting a correct food orders for your section to the Head Chef
Ensuring good rotation of stocks and correct storage procedures are adhered to
To ensure the correct procedures are used, particularly in the preparation of sensitive ingredients
To supervise the junior chefs during service
To ensure that portion control is maintained in accordance with kitchen & company guidelines
To ensure that all recipes of any new dishes are immediately recorded and submitted to Head Chef and to support any test dishes which may be necessary to achieve accurate costings
To produce food as directed and to present it at the times required
To challenge when standards are not met– support to achieve require improvement
To ensure all work areas are clean and tidy
To ensure the appropriate amount of stock levels are maintained
To work closely with all areas of the kitchen to ensure a smooth service
To anticipate any possible complaints and attempt to resolve them smoothly and efficiently Report/escalate any potential issues or complaints to the Management on duty
Operations
To be able to use and have a knowledge of equipment, tools and machinery within the kitchen, reporting any defects immediately
To carry out any reasonable request as directed by Head Chef
To highlight any Health and Safety matters to management
To deliver, champion & drive all things Zonda at The Halfway at Kineton

Pay: £35,000.00-£40,000.00 per year
