Full job description

Job Overview

We are seeking an experienced, highly motivated and passionate Sous Chef to join our culinary leadership team. The successful candidate will support the Head Chef in managing daily kitchen operations while maintaining exceptional standards of food quality, consistency, presentation and safety.

This is a hands-on leadership position suited to a chef with strong experience in Asian cuisine and high-volume restaurant service. The Sous Chef will lead the kitchen in the Head Chef’s absence, supervise and develop team members, manage food preparation and stock control, and ensure every dish meets the restaurant’s established standards.

Duties

Support the Head Chef in managing all aspects of daily kitchen operations
Lead the kitchen team and take full responsibility for service in the Head Chef’s absence
Prepare, cook and oversee the production of high-quality Asian dishes according to established recipes and presentation standards
Supervise food preparation and service to ensure consistency, speed and accuracy
Allocate duties, organise kitchen sections and coordinate workflow during busy service periods
Train, support and motivate chefs and kitchen assistants, maintaining high standards of performance and professionalism
Monitor food quality, portion control, presentation and wastage throughout each service
Assist with menu development, recipe testing and the introduction of seasonal or special dishes
Manage ingredient stock levels, ordering, deliveries, rotation and storage
Conduct regular stock checks and support the Head Chef in controlling food costs and kitchen expenditure
Ensure full compliance with food hygiene, allergen, HACCP and health and safety requirements
Monitor cooking, cooling, reheating and storage temperatures, ensuring accurate records are maintained
Maintain excellent standards of cleanliness and organisation across all kitchen and storage areas
Identify and resolve operational issues quickly and professionally
Communicate effectively with front-of-house management to ensure smooth and efficient service
Support staff scheduling and ensure the kitchen is appropriately prepared and staffed for service
Contribute to a positive, disciplined and collaborative working environment

Qualifications

Proven experience as a Sous Chef, Junior Sous Chef or experienced Senior Chef de Partie in a busy, high-volume restaurant
Strong knowledge of Asian cuisine, ingredients, preparation methods and wok cooking techniques
Excellent practical cooking skills, with the ability to maintain quality and consistency under pressure
Demonstrable experience supervising, training and developing kitchen staff
Strong knowledge of food safety, allergen management, HACCP procedures and commercial kitchen best practices
Level 2 Food Safety and Hygiene certificate is required; Level 3 is highly desirable
Good understanding of stock management, portion control, waste reduction and food-cost control
Excellent organisational, time-management and problem-solving skills
Ability to lead a team confidently during demanding service periods
Strong communication skills and a professional, team-focused attitude
High standards of personal hygiene, punctuality and reliability
Flexibility to work evenings, weekends and public holidays as required
Genuine passion for Asian cuisine and a commitment to delivering authentic, high-quality dishes

Pay: £32,760.00-£37,440.00 per year
