Full job description

Title: Commis Chef

Reports to: Ched de Partie / Sous Chef / Lounge Manager

Shift Times:

We aim to work on a rolling schedule consisting of 2 early shifts, 2 late shifts, 2 days, but this is subject to change according to the needs of the lounge.

1st Early Shift: 3.00am/3.30am – 11.30am/12.00pm

2nd Early Shift: 6.00am – 2.30pm

Mid Shift: Shift times vary depending on the needs of the lounge.

Late Shift: 12pm – 8.30pm/9.00pm

Summary of Position:

Your role is to produce and present food of the highest quality, following direction from the Sous and senior chefs on duty.

On occasion, YOU may be the senior chef and therefore expected to fulfil duties of this role competently.

You will give guidance and support to kitchen stewards and other members of staff when needed.

You will be responsible for the smooth running of your delegated section i.e. hot food or food preparation but must always consider the buffet presentation and replenishment to be our top priority.

There will be administrative tasks to be completed daily which will also fall under your responsibility.

Duties and Responsibilities

Prepare dishes for service in strict adherence to the company’s established menus and recipes, ensuring consistency and quality without deviation.
Maintain professional standards of food presentation, production, and portion control
Ensure a continuous and sufficient supply of all lounge food items, making sure that no items leave the kitchen unless they meet the temperature requirements according to health and safety procedures
Maintain a clean, well-stocked, and visually appealing buffet at all times by personally conducting frequent inspections throughout the shift.
Assisting in stock control, rotation, and wastage.
Uphold the highest standards of hygiene, cleanliness, and organization in both the kitchen and buffet areas to ensure an exceptional guest experience and full compliance with company standards.
Always maintain a professional and presentable appearance, adhering to company uniform and grooming standards without exception.
Immediately report any maintenance issues to the Sous Chef or Duty Manager.
Follow proper handling and storage of cleaning products. Reinforce best practices in hand hygiene, cross-contamination prevention, spoilage reduction, and pest control.
Complete allocated training within appropriate time frames via the PPG Think website or any alternative training platform supporting ongoing professional development.
Foster a positive and motivated work environment by providing support, encouragement, and constructive feedback to team members.
Whilst you are the senior chef on shift, you will be responsible for:
Maintaining an efficient break schedule to ensure the kitchen is always well-staffed.
Creating preparation lists and clearly defining team responsibilities at the beginning of each shift.
Following cleaning schedules.
Communicating important updates from the Sous Chef, including changes to the menu, procedures, staff positions, deliveries, and any other relevant operational adjustments.
Supervising and partaking in the kitchen clean up at the end of shift.

Experience

Food safety Level 1
Previous kitchen experience
Previous Hospitality experience.

Due to the nature of working at the airport the below will be required

You will need to have a valid passport

You will need to be authorised to work in the United Kingdom

You will be asked to complete 5 years of employment/education, so living in the UK for the past 5 years is desired

You must have a clean criminal record
