Deputy General Manager - New Opening - Edinburgh

£36,000-£38,000

A new neighbourhood pub is set to open its doors in the heart of Edinburgh, bringing together exceptional hospitality, quality drinks and a lively, welcoming atmosphere. With a carefully curated drinks selection, live music and genuine, personable service at its heart, we’re creating a destination where guests can relax, enjoy themselves and leave already planning their next visit.

From the team behind Glasgow favourites including Wunderbar and Kong, known for bringing energy, character and some of the city's best live music to their venues, we're now excited to bring that same spirit and passion to Edinburgh.

We’re looking for an experienced Deputy General Manager to join the team from the very beginning, supporting the General Manager in bringing this exciting new venue to life through pre-opening, launch and beyond.

About the Role

As Deputy General Manager, you’ll play a key role in supporting the GM throughout the pre-opening period, assisting with everything from building and training the team to operational planning, stock preparation and ensuring the venue is ready to open its doors. Once launched, you’ll take an active role in leading the daily operation, motivating and developing the team, maintaining exceptional service standards and delivering an outstanding guest experience while helping to drive the commercial performance of the business.

What the role involves

Supporting the Operations and General Manager with the delivery of the pre-opening programme and launch.
Assisting with the recruitment, onboarding and development of a high performing team.
Leading shifts through visible, hands-on management and setting the standard for service.
Creating a positive, engaging and accountable team culture built around genuine hospitality.
Delivering consistently outstanding guest experiences that encourage repeat visits.
Supporting labour management, rota planning and wage control in line with business targets.
Assisting with stock control, ordering, deliveries and inventory management.
Maintaining exceptional standards across the drinks offering, ensuring every pint, cocktail and serve is delivered with consistency and care.
Coaching and developing team members to build confidence, product knowledge and service standards.
Supporting the delivery of live music, events and promotional activity that enhances the venue's reputation.
Proactively managing guest feedback and resolving issues professionally.
Ensuring the venue remains clean, safe and fully compliant with licensing, health & safety and company standards.
Supporting the General Manager with daily operations and stepping up in their absence when required.

What are we looking for?

Previous experience as an Assistant Manager or Duty Manager within a quality pub, premium bar or high volume hospitality venue.
Experience opening a new venue or supporting a significant refurbishment and relaunch would be advantageous.
A confident leader with the ability to motivate, coach and develop others.
Strong operational knowledge with experience leading busy service periods.
Good understanding of labour control, stock management and commercial awareness.
A genuine passion for quality drinks, hospitality and creating memorable guest experiences.
Excellent communication, organisational and problem-solving skills.
Confidence making decisions in a fast-paced environment while remaining calm under pressure.
Experience working with live entertainment.
Experience in a premium pub or bar environment.
Punctual and reliable with a professional and approachable manner.
Up to date knowledge of licensing legislation, health & safety and compliance requirements.
A Personal Licence (preferred).
