Full job description

Maneki Ramen, part of the ART Hospitality Group, is a growing and exciting brand with a passion for delivering authentic, high-quality ramen. We are looking for an experienced, motivated, and hands-on Junior Sous Chef to support the leadership of our Birmingham kitchen.

Key Responsibilities

Kitchen Leadership

Support the Executive Chef and Sous Chef in the day-to-day running of the kitchen.
Lead and motivate the kitchen team during service, ensuring smooth operations and high standards are consistently maintained.
Assist with training, mentoring, and developing junior chefs and kitchen staff.

Food Quality & Consistency

Maintain exceptional standards of food preparation, presentation, and consistency across every dish.
Monitor quality control throughout service, ensuring all food meets Maneki Ramen's standards before leaving the kitchen.
Support menu development, recipe adherence, and continuous improvement initiatives.

Food Safety & Compliance

Ensure all Food Hygiene, HACCP, and Health & Safety procedures are followed at all times.
Help maintain a clean, organised, and compliant kitchen environment.
Assist with stock rotation, waste management, and accurate temperature and safety records.

Operational Excellence

Support stock control, ordering, and inventory management to minimise waste and maximise profitability.
Be confident working under pressure in a busy, fast-paced kitchen while maintaining attention to detail.
Step into a leadership role in the absence of the Sous Chef when required.

What We're Looking For

Previous experience as a Chef de Partie or Junior Sous Chef in a high-volume kitchen.
Strong organisational and communication skills.
A positive attitude with a passion for developing others and leading by example.
Ability to remain calm and efficient during busy service periods.
A genuine passion for producing exceptional food and delivering memorable guest experiences.

Additional Information

Knowledge of Japanese cuisine is not essential. Full training will be provided by Pete, our Executive Chef/Director, allowing you to develop specialist skills in Japanese food preparation and culinary techniques.
