We are looking for a driven, talent-packed Senior Chef de Partie ready to step into a Junior Sous Chef role within the next 6 months to join our brigade at The Falcon Inn in Long Whatton.

This isn't an average, cookie-cutter kitchen role. Our food trade is getting busier by the day, we're growing fast, and we have big expansion plans in the pipeline—including expanding our kitchen to keep up with demand!

We don't just want someone to run a section—we want someone with the drive to step up to the pass, learn kitchen management, and earn the Junior Sous title as we scale up our operations.

Your Role & Fast-Track Progression

Section Mastery to Pass Leadership: Start by taking total ownership of key sections, then rapidly transition into running the pass, directing service, and managing the kitchen alongside the Head Chef as cover numbers rise.
Fresh & Seasonal Cooking: Craft high-end, fresh pub classics and contemporary dishes, showcasing your creativity through daily specials and seasonal menu changes.
Junior Sous Mentorship: Over the next 6 months, receive structured coaching on stock management, GP calculation, ordering, and kitchen leadership to prepare you for your official promotion to Junior Sous.
Team Leadership & Culture: Train, guide, and inspire CDPs, Commis Chefs, and Kitchen Porters, fostering a positive, energetic, and supportive kitchen culture.
Kitchen Expansion & Operations: Play an active role in keeping kitchen operations streamlined, controlling prep/waste, and preparing for our upcoming kitchen extension.
High Standards & Compliance: Maintain absolute cleanliness, food hygiene, and EHO-compliant health & safety standards (HACCP/COSHH) at all times.

What We’re Looking For

An ambitious Senior Chef de Partie who feels ready for their next step and wants a clear 6-month roadmap to Junior Sous.
A genuine passion for fresh, locally sourced, seasonal ingredients and creative presentation.
A calm, decisive presence under pressure with natural communication and leadership potential.
Flexibility and adaptability—comfortable handling everything from steady weekday services to bustling, high-volume weekends.
Solid knowledge of food safety, hygiene regulations, and kitchen operations.
