Senior Sous Chef – London Shell Co.

Overview

This role is likely to suit an ambitious Sous Chef looking to step into their first Senior Sous position, or an established Senior Sous Chef looking for greater responsibility within a respected independent restaurant.

We are seeking a passionate and experienced Senior Sous Chef to join the team at our neighbourhood fish restaurant on Swain's Lane, N6.

This is a role for someone who genuinely loves cooking, ingredients and restaurants. We are not looking for a clipboard chef or someone interested solely in management. We want someone who enjoys being in the kitchen, teaching others, cooking beautiful fish and helping to maintain the standards that have made London Shell Co. one of North London's most loved restaurants.

The role involves working closely with Head Chef Fede Pollame and company directors Harry and Stuart. We are a small independent business and everyone is hands-on. You will be involved in all aspects of kitchen operations, from menu development and supplier relationships to training junior chefs and leading services.

We buy fish directly from Brixham Market, work with some exceptional producers and cook a menu that changes regularly according to seasonality and availability. Strong product knowledge is central to what we do.

As a company we are looking to expand in the coming years, so this role would suit someone ambitious who is keen to grow with the business and help shape its future.

Joys of the Job

Working with fish is a privilege. Every day brings something different, from whole turbot and wild bass to shellfish, oysters and whatever else the boats have landed that morning.

You will work closely with Fede, whose knowledge and enthusiasm for fish cookery, Italian cuisine and kitchen culture is infectious. There is plenty of scope to contribute ideas, dishes and techniques once you have settled into the role.

A few times each year we organise visits to suppliers, producers and fishing communities. These are some of the best days of the year and form an important part of how we learn and develop as a team.

The restaurant has received some wonderful reviews since opening and has built a loyal local following. We care deeply about maintaining that reputation whilst continuing to evolve and improve.

Core Responsibilities

Work closely with the Head Chef to oversee all aspects of the kitchen operation.
Lead services in the Head Chef's absence and maintain standards at all times.
Train, mentor and develop junior chefs.
Assist with recruitment, onboarding and performance management of kitchen staff.
Manage prep, mise en place and service organisation.
Monitor ordering, stock control and wastage.
Work towards food cost targets and identify opportunities to improve efficiency.
Maintain excellent food hygiene and health & safety standards.
Assist with menu development and daily specials.
Ensure consistency, quality and attention to detail across every dish leaving the kitchen.
Foster a positive, professional and supportive kitchen culture.

Qualifications

Proven experience as a Sous Chef or Senior Sous Chef in a quality restaurant environment.
A genuine passion for fish, seafood and seasonal produce.
Strong leadership skills and experience managing kitchen teams.
Excellent organisational skills and attention to detail.
Calm under pressure and capable of leading busy services.
Good understanding of GP, stock management and kitchen administration.
Excellent communication skills and a collaborative approach to working with both kitchen and front-of-house teams.
Sound knowledge of food safety, allergens and kitchen compliance.
A positive attitude and a genuine love of hospitality.

What We're Looking For

More than anything, we are looking for someone who loves restaurants and wants to be part of a business that genuinely cares about what it does.

You should be equally comfortable breaking down a fish, training a commis chef, running a busy Saturday service and discussing new dish ideas over a coffee after prep.

A sense of humour helps too.
