Full job description

Job Overview
We are seeking a skilled and dedicated Catering Butcher to join our team. The ideal candidate must be proficient in all aspects of butchery including carcass breakdown deboning, trimming and portioning to specific sizes, the ideal candidate will be required to cut and prepare beef, lamb, pork, poultry, and game products to restaurant specification

Duties

Prepare and portion various types of meat according to specific catering requirements
Carry out butchery tasks including trimming, deboning, and filleting meat cuts
Ensure all food preparation meets food safety standards and hygiene regulations
select correct meat cuts for each order
Maintain cleanliness and organisation of the butchery area and equipment
to prepare customer orders to time deadlines
to manage and rotate stock
Follow all health and safety protocols during food handling and preparation processes
to have the ability to work standing at butchers blocks for long periods
Experience
Proven experience in food production, particularly in butchery or meat preparation
Strong knowledge of food safety standards and best practices in kitchen hygiene
Previous experience in food preparation, including handling different types of meat cuts
Familiarity with equipment used in butchery and food processing
Experience working in a fast-paced environment with attention to detail is essentialThis role offers an excellent opportunity for individuals passionate about butchery. The successful candidate will be committed to maintaining high standards of quality, safety, and efficiency within our catering operations.

Pay: £35,000.00-£41,279.51 per year
