Fantail is a growing group of antipodean cafés and catering operations with a central production facility based in East London, supplying multiple café sites and catering operations daily.
We're building a modern bakery programme inspired by the café cultures of New Zealand, Australia, California, and London — bringing together nostalgic antipodean classics, generous home baking, and modern café favourites.
Our bakery is centred around food that feels abundant, comforting, and genuinely exciting to eat. Think oversized muffins, caramel slice, school cake, coconut banana bread, NYC cookies, rough puff pastries, morning buns, and elevated home-style baking made properly and at scale.
We're looking for a Junior Baker / Bakery Production Assistant to join our growing bakery team and help produce bakery products for our cafés and catering operation.
This is an excellent opportunity for someone early in their baking career who wants to learn, develop, and grow within a supportive, ambitious production environment.
You'll work directly alongside our Senior Baker / Bakery Production Lead, helping to build a growing bakery programme while developing your own skills and career.
What You'll Be Doing
- Producing a range of bakery products including muffins, cookies, tray bakes, cakes, pastries, and frozen bake-off items
- Weighing, scaling, mixing, and preparing ingredients accurately
- Following recipes, production sheets, and bakery standards
- Assisting with baking, finishing, portioning, and packaging products
- Supporting freezer stock management, labelling, and stock rotation
- Helping maintain organised and efficient production areas
- Assisting with deliveries, stock checks, and general bakery preparation
- Working closely with the Senior Baker / Bakery Production Lead and wider kitchen team
You'll work with modern production equipment including Rational ovens, planetary mixers, and sheeters.
