At Pine Trees, we want our team and our guests to step away from the hustle and bustle and take in the breath-taking scenery within our 10-acre woodland estate.

As we embark on our exciting rebrand and open Flora and Fauna, you will be an integral part of our inspirational Management team, with several key managers joining together to drive this exciting new Pine Trees Hotel chapter forward.

Our bar, Flora, is named to honour the diverse botanicals that flourish across Scotland, infusing our cocktails with the fresh, aromatic essence of the Highlands. Our restaurant, Fauna, celebrates the exceptional produce sourced from Scotland's fields, forests, and waters, bringing the best of the land to your plate. Together, Fauna and Flora embody the natural beauty and bounty of Scotland.

Your role:

As Restaurant and Bars Manager with Pine Trees Hotel, you will possess excellent attention to detail, be creative and innovative with the vision to capitalise on sales opportunities. You will be committed to building and developing the team. You will pride yourself on creating an exceptional experience for our guests, ensuring that the highest level of customer care is delivered by the team.

You will be friendly and approachable; you will go the extra mile for our guests; you will provide highly consistent good service and you will lead by example.

You will bring a passion and attention to detail that will make you an exceptional Restaurant Bars Manager that our guests will love to interact with. Your passion will ignite the experiences for our guests.

Joining the restaurant team, you will:

Co-ordinating and directing employees to ensure the delivery of excellent customer service within the restaurant and bar areas.
Take responsibility for the day-to-day operation of the restaurant and bar; incorporating breakfast, lunch and dinner service, room service and also catering for larger parties.
Maximising sales, profits, and customer satisfaction.
Respond to audits that are completed by the company to ensure continual improvement is achieved.
Controlling the food and beverage budget, in relation to occupancy, departmental expenses and staff rotas.
Ensuring that all the administration, cash control, stock control and security procedures are adhered to by self and team members.
Create a team environment that promotes good employee morale and ensures a high level of commitment, engagement and pride in the department and hotel.
Introduce and carry out regular checks to ensure all team have the skills to successfully deliver excellent restaurant and bar service.

About You:

On your first day you will begin a structured 12 week learning journey, giving you the skills, knowledge, and confidence to be a great Restaurant and Bars Manager.

We will support you by giving you the platform to develop, learn shine!

We ask of you:

Experience at management level in the Food/Bar service sector.
In-depth knowledge of Restaurant and Bar functions including stock control, cellar management, Restaurant operation, bar operation and customer service.
The ability to lead and motivate a team of Supervisors and Assistants in service delivery.
Previous experience in recruitment, coaching, training and performance management of staff.
Excellent understanding of Licensing Law, Health Safety and Allergen Legislation, ideally a Personal License holder or suitably qualified
