Sous Chef / Junior Sous

Location: Pastures Lodge & Hotel
Hours: Full Time (45hrs/week), no split shifts. Weekend availability required. Two consecutive days off where the business allows.

About the Role

We are looking for an ambitious, passionate, and hands-on Sous Chef (or Junior Sous) to join our growing kitchen team at Pastures Lodge & Hotel.

This is an exciting opportunity to work within a fast-paced hospitality operation featuring two busy food outlets, extensive banqueting facilities, and a thriving events business. The successful candidate will support the Head Chef in delivering exceptional food quality and consistency across all areas of the business.

Our venue regularly caters forlarge covers, alongside large-scale events including weddings, celebrations, conferences, coach tours, and corporate functions. No two days are the same, making this an ideal role for a chef who thrives under pressure and enjoys leading from the front.

Key Responsibilities

Support the Head Chef in the day-to-day management of the kitchen operation.
Lead and motivate the kitchen team to deliver high standards of food quality, presentation, and consistency.
Assist in managing service across two food outlets and banqueting operations.
Ensure smooth delivery of weddings, functions, and large-scale events.
Maintain high standards of food hygiene, health & safety, and allergen compliance.
Assist with stock control, ordering, and supplier management.
Support labour management and efficient rota planning.
Help achieve GP targets through effective portion control and waste management.
Train, develop, and mentor junior chefs and kitchen porters.
Maintain a clean, organised, and professional kitchen environment.
Step into the Head Chef's role when required.

What We're Looking For

Previous experience as a Sous Chef or strong Junior Sous Chef ready to take the next step.
Experience working within high-volume hospitality environments.
Strong background in banqueting, weddings, or event catering is highly desirable.
Excellent organisational and leadership skills.
Ability to remain calm and focused during busy service periods.
Strong understanding of food safety, HACCP, and allergen management.
Commercial awareness with a focus on cost control and kitchen efficiency.
Passion for fresh food, team development, and delivering memorable guest experiences.
Flexible approach to working hours, including evenings, weekends, and peak event periods.
