Sous Chef // Chef de Partie Position Available

The White Lion Hotel is an independent coaching inn serving high-quality British food made from scratch using the finest locally sourced ingredients. Our menus celebrate classic dishes with modern creativity, offering guests food that is comforting, satisfying and beautifully executed.

The Role

We're looking for an ambitious and motivated Sous Chef to work alongside our Kitchen Team and Head Chef in leading the kitchen team. We would also be open and keen to work with a developed CDP looking to take that next career step.

This is a hands-on leadership role. You'll be expected to lead by example during service, maintain exceptional food standards and help develop a positive, professional kitchen culture. You'll have real input into menu development, training, stock control and the day-to-day operation of the kitchen as we rebuild and invest in our new kitchen structure.

The successful candidate will be someone who enjoys collaborating with and coaching others. They must thrive in a busy service and takes genuine pride in producing outstanding food every day.

Key Responsibilities

Support the Kitchen Manager and Head Chef in the daily running of the kitchen.
Lead the kitchen confidently in their absence.
Ensure consistently high standards of food quality, presentation and consistency.
Manage sections during preparation and service while supporting the wider team.
Train, mentor and develop junior chefs.
Assist in creating seasonal menus and daily specials.
Monitor stock, ordering and deliveries.
Minimise waste and maximise gross profit through effective stock management.
Ensure food safety and HACCP procedures are followed at all times.
Help produce staff rotas where required.
Maintain excellent kitchen cleanliness and organisation.
Foster a positive, hardworking and respectful team environment.

What We're Looking For

Previous experience as a Sous Chef, or a strong Chef de Partie ready to step into a leadership role.
Excellent knowledge of fresh, seasonal British cuisine.
Strong organisational and leadership skills.
Calm under pressure with excellent communication.
Passion for mentoring and developing others.
High standards of cleanliness, food safety and kitchen discipline.
Food Hygiene Level 3 (preferred).
A genuine passion for hospitality and quality cooking.

Working Hours

Approximately 44 hours per week
Typically four days out of seven
Weekend working required on a rota basis with one day off every weekend between Friday and Sunday
Shift patterns designed to provide a fair work-life balance while meeting the needs of the business.

Pay: £30,000.00-£35,000.00 per year
