Full job description

Stoke by Nayland Resort is looking for a passionate and driven Sous Chef to join our Main Kitchen, delivering outstanding food across our award-winning Lakes Restaurant, weddings, conferences and events.

Working alongside our Executive Chef and Head Chef, you'll play a key role in leading the kitchen team, maintaining exceptional food standards and helping to deliver memorable dining experiences for every guest. This is an exciting opportunity for an experienced Sous Chef, or a talented Senior Chef de Partie ready to take the next step in their career, to join a supportive team with genuine opportunities for development and progression.

About the Role

As Sous Chef, you'll support the day-to-day operation of our busy Main Kitchen, ensuring consistently high standards across our à la carte restaurant, weddings, private events and functions.

Working closely with the Head Chef and Executive Chef, you'll help drive creativity, quality and profitability while developing and inspiring the team around you.

Your responsibilities will include:

Supporting the delivery of seasonal menus using fresh, locally sourced ingredients wherever possible.
Helping to create exciting new dishes that enhance the guest experience and drive food sales.
Leading the kitchen in the absence of the Head Chef, ensuring service runs smoothly and efficiently.
Maintaining exceptional food quality, consistency and presentation across all services.
Managing stock, food preparation and storage to minimise waste and achieve food cost targets.
Supporting labour control and efficient kitchen operations.
Coaching, mentoring and developing junior chefs to help them reach their full potential.
Building strong relationships with the front of house team to ensure seamless service.
Leading by example and creating a positive, professional and supportive kitchen culture.
Ensuring all food safety, allergen, COSHH, HACCP and Health & Safety procedures are followed at all times.
Maintaining accurate records and ensuring compliance with company policies and current legislation.

What We're Looking For

You'll be someone who takes pride in delivering exceptional food and enjoys leading from the front.

You'll have:

Previous experience as a Sous Chef, or be an experienced Senior Chef de Partie ready to progress.
Experience working in a quality hotel, restaurant or events kitchen.
Strong leadership skills with the ability to motivate, coach and develop others.
A passion for fresh food, seasonal ingredients and delivering consistently high standards.
Excellent organisational and communication skills.
A good understanding of food cost control, waste management and kitchen profitability.
A flexible approach and the ability to perform well under pressure.
Excellent knowledge of Food Safety, HACCP, COSHH and allergen legislation.
A positive attitude, strong work ethic and willingness to support your team wherever needed.
